I sometimes hear the claim that the full claim of the phrase “The customer is always right” is “The customer is always right *in matters of taste*”, but I found no evidence of this being the case.

The popular phrase was said—as-is—by turn-of-the-20th-century mega-retailers like Marshall Field. “The customer is always right”, full stop.

What likely happened is a popular conflation with the Latin saying “de gustibus non disputandum est”, which translates to “in matters of taste, there can be no disputes”. In other words, there’s no accounting for taste; the customer gets to decide what they like or don’t based on their own preferences.
